Sweet Potato Fries

We eat a lot of sweet potato's at our house. They are much healthier than regular potatoes and Judah loves them. Tonight for dinner we had a baked chicken, sweet potato fries and couscous with bell peppers in it.

Sweet Potato Fries:
Peel a sweet potato and then cut it into "fry" size pieces.
Toss the sweet potato in a bowl with enough olive oil to just coat the pieces. Then add a touch of salt, pepper, garlic powder and paprika. Stir it all up so, the pieces are all well seasoned.
Arrange the fries on a cookie sheet lined with parchment paper.

Bake at 425 for approx. 20 minutes, flipping the pieces over about half way through.

  2. I've had these once. I liked them. I was a little intimidated to make them. I make regular potato fries all the time. Don't know why I haven't just tried them. You've inspired me. Next time I'm at the store I am going to grab a sweet potato!

  4. I bought the sweet potato fries from Costco a while back and I thought my kids would love them... alas they did not... I am going to try and make these for them and see if homemade is a hit or not. They look yummy to me!
