Baking healthy muffins with my baker

The other day Judah was sitting at the kitchen table and out of the blue he said "Mommy, what is the baker doing?". Not knowing what he was referring to, I replied "Well honey, what do you think the baker is doing?" I could see the wheels turning in his mind for a second and then he replied "Maybe the baker is making muffins!!!!". Then and there, I decided that Judah and I need to make some muffins together and we need to do it soon. Today we finally got around to it. We ended up kind of making up our own recipe and although they are super healthy, they are also super yummy! Judah is used to not eating white flour and to him, raisins are a treat so, he loves them.

Before we started our baking, I made Judah and his very special stuffed puppy, "Sandals" baker hats. A baker always needs a baker hat, right? And so does his puppy, of course!
While we were making our muffins, my mom stopped by on her way to VBS. I love this picture of them! They both look so happy!

My Baker's Healthy Muffins:
Dry Ingredients
2 cups whole wheat flour
1/2 cup flax seed meal
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
3/4 cup raisins

Wet Ingredients
3 eggs, lightly beaten
1 cup applesauce
2 mashed very ripe bananas
1/2 cup honey
2 teaspoons vanilla

Preheat oven to 350. Grease muffin tin or line with paper liners.
In a large bowl, stir together dry ingredients.
In a separate bowl, stir together wet ingredients.
Stir wet ingredients into the dry ones, just until moistened.
Scoop batter into prepared muffin cups and bake in pre-heated oven 12-15 minutes.
Makes approx. 15 muffins.
