Dark Chocolate Brownie Bites

  • 1 cup butter
  • 2 cups white sugar
  • 4 eggs
  • 2 teaspoon vanilla extract
  • 2/3 cup unsweetened dark chocolate cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder

  1. Preheat oven to 350 degrees F. Spray paper muffin liners with non-stick cooking spray.
  2. In a large saucepan, melt butter. Remove from heat, stir in sugar, eggs, and vanilla. Stir in cocoa, flour, salt, and baking powder. Scoop batter into greased muffin cups, filling half way.
  3. Bake in preheated oven for 15-20 minutes. Do not overcook.
  4. Remove muffin cups from tin and place on cooling rack until cool.
  5. Makes approx. 21 brownie bites.
