First Lettuce from the Fall Garden

This morning, I put beans in the crock pot to make my sister's delicious homemade re-fried beans. A good friend of mine was over and I told her I feel "so on top of it" when I have dinner going in the crock pot. Well, the beans cooked and cooked. They made the house smell delicious BUT, they weren't ready in time for dinner. I turned the crock pot onto high, I tried to mash them with a potato masher but, it wasn't going to happen. They were still way too hard when dinner time rolled around. 

I decided to go with plan B and go pick some lettuce from our fall garden that I've been eyeing the last few days. It was rainy and cold outside but, I threw my flip flops on, scooped sock-less Judah up onto my hip and we dashed outside to pick our FIRST lettuce. You might be thinking "ok, what's the big deal? It's just lettuce". Well yes, it is just lettuce but, we grew it in our first garden at our first house that we've ever owned and that gets me a little excited. Also, it's the experience of growing something with Judah, letting him see how we water it and then letting him help pick it. Really, it's all about the experience.


 We washed it and I ate it for dinner with a can of tuna and pickles. I'll be honest and tell you that the rest of the family ended up having canned chili and quesadillas for dinner because my beans weren't ready in time.
At 9pm tonight, the beans were finally done and they are delicious. We'll enjoy them tomorrow. Good night!

  3. I made refried beans on the stove a few days ago because I knew I didn't have enough time for them to cook all the way in the crock-pot. You'll enjoy them tonight! Yum!
