Pumpkin Cake Mix Cookies

This morning I decided to make up a little cookie recipe of my own. I had canned pumpkin and a cake mix so, I decided to give this a whirl..........

5 Things I Love About Pumpkin Cake Mix Cookies:

•The are inexpensive to make.
•They are a pretty color.
•They are chewy and delicious.
•They make my house smell like fall.
•They freeze well.
•They'd be great to give anyone for a little present.

Ok, well I guess that was 6 things that I love about these cookies. 

Here's what you need:
1 White Cake Mix
2 cups pureed pumpkin (I just used canned Libby's pumpkin)
1/2 cup powdered sugar

Pour the cake mix into a medium sized bowl. With a wooded spoon, stir in the pumpkin until it is well combined. Pour the powdered sugar into a small bowl. Take a scoop of the pumpkin cake mixture and drop it into the powdered sugar. Roll it around with a spoon until it is coated with powdered sugar.

Put the cookies onto a greased baking sheet and bake for 10-15 minutes in a pre-heated 350 degree oven. My cookies were big so, they baked for 15 minutes. 

After Judah ate his lunch, he got to try one. He said they were good!

  2. I make a pumpkin cookie using a cake mix too. I haven't put the powdered sugar on them before. THAT would make them EVEN BETTER. Yum. Love the idea.
