Chewy Coconut Brownies

This year, we celebrated New Year's Eve with my sister, her family and her husband's cousins. I had an absolute blast visiting with everyone in their new home and watching the cousins play. While we were there, Judah found a book and a comfy spot to read it. I love this picture of him reading. 

We also ate really yummy food. Make your own sandwiches with all the fixings, taco soup and Chewy Coconut Brownies. Now that it's a new year and Christmas time is over, I won't be having any sugar for awhile but, that isn't stopping me from posting just one more sweet recipe. If anything, I'm going to post this recipe so, I won't forget how these were made, and I'll have a place to refer back to, when the day comes that I can finally eat sugar again. 

Chewy Coconut Brownies
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/3 cup vegetable oil
1/2 cup boiling water
2 cups white sugar
2 eggs
1/3 cup vegetable oil
1 1/3 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup sweetened shredded coconut

Preheat oven to 350 degrees F. Grease and flour a 9x13 inch pan.
In a large bowl, stir together the cocoa and baking soda. Add 1/3 cup vegetable oil and boiling water. Mix until well blended and thickened. Stir in the sugar, eggs, and remaining 1/3 cup oil. Finally, add the flour, vanilla, salt and coconut; mix just until all of the flour is absorbed. Spread evenly into the prepared pan.

Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the cake comes out clean. When the brownies come out of the oven, sprinkle just a touch of powdered sugar and coconut on top. It'll make them look pretty and making them look pretty is half the battle! Allow to cool before cutting into squares.
