White Chocolate and Coconut No Bake Cookies

For Valentine's Day, I made the girls at my table some super easy White Chocolate and Coconut No Bake Cookies. A few of them mentioned that they'd like the recipe so, here you go ladies!


White Chocolate & Coconut No Bake Cookies
1/4 cup butter
1/2 cup milk
1 package white chocolate chips
1 cup shredded coconut
3 cups quick cooking oatmeal

Over low heat melt the butter. After the butter is melted, stir in the milk and white chocolate chips. Continue to stir over low heat until the white chocolate is melted. Turn the heat off and stir in the coconut and oatmeal. Scoop onto waxed paper and place in the refrigerator to quickly harden. After the cookies are set up, they can be stored at room temperature. These cookies are rich, super easy to make and a fun alternative to the regular no bake cookie.

  9. Instead of coconut, I made this with a cup of raisins (soak them for a minute to get them soft). It turned out fabulous! Thanks. There are few no-bake recipes that have no chocolate or peanut butter. No-bake oatmeal raisin cookies rock!
