Bacon and Spinach Stuffed Mushrooms

I've mentioned before that I gave up sugar and basically all things starchy back in February. I know, that sounds hard and maybe a little crazy, right? Well, it actually hasn't been that bad and losing the rest of my baby weight has made it so worth it. I've been eating a lot of protein and veggies and to be honest, I don't really feel that deprived. Last night I made Bacon and Spinach Stuffed Mushrooms and oh my, they were good!

If you like bacon (and who doesn't) and if you like mushrooms, you should give these a try! The entire recipe only has 2 slices of bacon in it so, they really aren't that bad for you and with the entire bag of spinach in the recipe, I would actually call them healthy.

Here's what you do......................
Wash and remove the stems from 5 or 6 very large mushrooms.
 Chop the stems into tiny pieces and then over medium heat, saute` them with two slices of bacon.


 When the bacon is nice and crispy, set it to the side, on a paper towel. Leave the tiny mushroom stem pieces in the pan and turn the heat to very low. Dump in an entire bag of spinach and then cover with a large lid, to help keep the steam in.

 While the spinach is cooking, grate about 1 1/2 cups of cheese. I used Pepper Jack, because my husband and I like a little spice. Really, you could use any type of cheese that you like. It's cheese, and cheese is good.  Stir your spinach around and then cut the bacon strips into tiny pieces.
 After a few minutes, the spinach will become totally wilted and it'll look like this:
 Stir in the grated cheese and chopped up bacon. Add a good sprinkle of black pepper and then grease your baking dish. I baked ours in my loaf pan and that worked well.
Spoon the bacon and spinach filling into the mushrooms and then bake in a preheated 350 degree oven for approximately 20 minutes, or until the mushrooms are soft.
Serve as a main dish or as a side. My hubby and kids had leftover spaghetti with theirs and I had no-noodle lasagna with mine. Or, just make them for yourself and serve them with nothing! Either way, enjoy. 

Bacon and Spinach Stuffed Mushrooms
 5 or 6 large mushrooms
2 slices of thick bacon
1 bag of spinach
1 1/2 cups grated cheese
Big sprinkle of black pepper

Wash the mushrooms and then remove stems. Cut the stems into tiny pieces and the saute` with bacon over medium heat. When the bacon is nice and crispy, remove and set on a paper towel. Turn the heat to very low and add the bag of spinach. Cover the pan with a lid and allow spinach to completely wilt down.

While the spinach wilts, grate the cheese and chop the bacon strips into tiny pieces. After the spinach is all wilted, stir in the bacon bits, the grated cheese and add a big sprinkle of black pepper.

Grease a baking dish and then stuff your mushrooms. Pile the mushrooms high! Bake in a preheated 350 degree oven for approximately 20 minutes or until mushrooms are tender.
