A Friends Party and Rhubarb Apple Cake

This morning the kids and I went to a Birthday party for one of their little buddies. The sweet little guy turned 2 today and we had the best time celebrating with him. His mommy happens to be a dear friend of mine so, it was really nice to visit with the other moms, while the kids played around together.

Now, my kids are both sound asleep in their beds, after having a fun morning partying with their friends. Since I have a moment, I thought I'd share a yummy recipe for Rhubarb Apple Cake. Judah helped me make this cake last week and I think it's definitely a recipe worth sharing. This recipe is adapted from here. The original recipe calls for sour cream but, when I made the cake we didn't have any so, I used Vanilla Yogurt instead. I'm sure you could use either one and it would  be delicious either way!
Rhubarb Apple Cake
2 cups flour
1 t baking soda
1/2 t salt
1/2 t ginger
1/2 cup butter
1.5 cups brown sugar
1 egg
1 cup vanilla yogurt
1 t vanilla
1 1/2 cups chopped fresh rhubarb
1 cup apple, peeled and chopped into 1/2 inch chunks
(Rhubarb only option – replace apple with additional cup of rhubarb)

Topping:
1/2 cup sugar
1/2 cup chopped walnuts
1 t cinnamon
1/2 cup rolled oats
2 Tablespoons melted butter

Mix, flour, soda, salt & ginger and set aside. In a large mixing bowl, cream together butter and brown sugar. Beat in egg. Beat in flour and yogurt alternately until blended. Mix in vanilla and rhubarb. Spread in a greased/floured pan (either 9 x 13, bread pan or bundt works). For topping, mix together sugar, nuts, cinnamon, oats and melted butter into a crumble. Sprinkle over top. Bake at 350 degrees for 45 – 55 minutes.

Now I'm off to try heat up a cup of coffee and gather up some items for the garage sale that we're going to have in a few weeks. I don't know about you but, I've been feeling a major urge to get rid of stuff! Maybe it's because I have a crazy garage sale habit and I don't want to feel guilty bringing new things into our home. Also, I feel like I'm not nearly as organized as I used to be. Lately I've been trying to figure out if I really do need to work on being more organized or if my expectations of myself are just too high. It's hard to know sometimes, know what I mean?

Anyway, enjoy the Rhubarb Apple Cake! You're sure to love it!
