Baby Info and Delicious Blueberry Crumb Bars

Sharing our big news last night was both exciting and slightly scary. I understand that a lot of people wait until their second trimester because if anything were to happen, then they wouldn't have to take their wonderful news back. From my perspective, I guess I've always felt that either way, I love having the support of my people around me. To be honest, yes....sometimes I do feel scared. Way more so than I would share with you right now but, in the back of my mind, I know that I don't have any good reasons for my fear. I suppose we all love our children with everything in us and from the very beginning, we want them to be perfectly healthy.

We are super-duper excited and when we told the kids, we got the whole thing on video. Judah clapped and cheered and it was so beyond precious. Later, he said he needed to call his Auntie to tell her that "Mommy has a baby in her tummy!".

Pregnancy is one of those things that I just love. I love the miracle of new life and even when I'm sick, I'm trying to embrace every moment. I feel incredibly blessed and I'm excited that our family is growing. It's amazing to think that God already has a plan for this little one!

Today we had a fun morning out Blueberry picking with our MOPS friends. It was a great time and we ended up coming home with a decent amount of berries! Not too bad, considering Paisley only picked the unripe  green ones and Judah spilled his entire bucket (by mistake!).

 When we came home, I tucked my tired babies into their beds for nap time and set out to find myself a great Blueberry Bar recipe. Washing the berries in a salad spinner worked great. Aren't they pretty???
The recipe for these Blueberry Crumb Bars was found here and I highly recommend it. I love these! They were super easy to make, the texture is perfect and they have just the right amount of sweetness.
Blueberry Crumb Bars
1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold unsalted butter (2 sticks or 8 ounces)
1 egg
1/4 teaspoon salt
Zest and juice of one lemon
4 cups fresh blueberries
1/2 cup white sugar
4 teaspoons cornstarch

1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.

2. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.

3. In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.

4. Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.
Now the challenge is for my family to make these bars last for at least a few days. I wish I had a great spot where I could hide them away and we would forget about wanting to gobble up the entire pan in one sitting.
They are just that good.

  5. What a perfect way to use those gorgeous blueberries! I love this recipe! Isn't wonderful to be able to go pick your own berries?? Great thing to do with kids.
