Thai Lettuce Wraps (Low Carb and Amazing)


Have I mentioned how much I love it when my husband cooks for me? Well, I do......especially when it's healthy and he cleans the kitchen afterwards. With his crazy work schedule, I end up doing most of our cooking but, on the days when he does cook for us, the baby in my tummy and I do a happy dance. His cooking rocks!

Last weekend, we were watching some random show on The Food Network. The show featured a Thai restaurant somewhere in (I believe) Hawaii and the chef served Thai Lettuce Wraps. As I laid on the couch, watching the deliciousness that was happening on our television screen, I looked over at my love and said in my most serious pregnant-sort-of-way "I need you to make that for me". So, the next day he re-created the recipe and this is what he came up with......

These are amazing. They are healthy. Heck, they are even low-carb, if you happen to be into that sort of thing. They made me happy and now I want him to make them for me again, like now.

*** You'll notice that this recipe mentions "julienne style" a few times. Is this important? Yes but, grating the cabbage and carrot would work also. What matters is that these veggies are in thin, long strips.

Now I want some of these again. Would it be too much if I asked him to make these again for me this weekend?

  1. Looks like the carrot is done on a veggie peeler.. that would be faster, easier. Did he do that or make the "matchsticks" and I'm just seeing it wrong (or is that a picture you found of the dish elsewhere?) Looks VERY good! You have a talented (and thoughtful) husband!

    1. You are right..he did the carrot on these ones with a veggie peeler. It is faster than chopping it like "matchsticks" and it worked just fine.
