So, instead of hitting the fast food joints, I've been trying to come up with healthy snacks that the kids and I like. These fruit and nut bites are made with raw, whole foods and they're so simple to make. We use raisins and prunes when we make ours but, I'm sure that any type of dried fruit would work.
In a food processor mix:
1 cup prunes
1 cup raisin
2 cups of nuts ( I used 1 cup almonds, 1/2 cup walnuts and 1/2 cup pecans)
dash of salt
large dash of cinnamon
After the mixture is well combined, form it into small balls and roll it in unsweetened coconut.
Keep the balls in the fridge for easy snacking.
My kids love these, almost a little too much.
