Hearty Split Pea Soup- The Perfect Use for Leftover Ham

This morning, about 5 minutes after I finished my breakfast, I busted out a garbage bag and I literally threw away all of the sweets in our house. Well, I saved the kids stocking candy for them, because that would have simply been mean but, besides that- all the sweets went into the garbage. And it felt good. Really good.

I love, love, love Christmas and I love hosting but, the only downside is all of the junk food that's left over. Some folks would say "You're pregnant! It's okay, just eat it!" Unfortunately  the huge tray of cookies on the counter weren't helping me grow a bigger, healthier baby. They were making my buns bigger. I wish it didn't work like that.

So anyway.

The leftover ham was too delicious to toss out so, I made our favorite Hearty Split Pea Soup with it. This recipe is a slow-cooker recipe and it's totally delicious and easy. Basically, you throw all of the ingredients into your crock pot, don't stir it, come back 4-6 hours later, add a touch of milk and then serve it.

Hearty Split Pea Soup
16 ounces dried split peas
2 cups diced fully cooked ham
1 1/2 cups diced carrots
1/2 cup diced celery
1 medium onion, chopped
2 garlic cloves, minced
salt and pepper, to taste
2 sprigs rosemary (to be taken out after the soup is cooked)
7 cups boiling water
1 cup hot milk

In a slow cooker, layer the first 9 ingredients, in the order listed. Do not stir. Cover and cook on high for 4-5 hours, or until vegetables are tender. Stir in milk and discard rosemary sprigs before serving.
