Honey Wheat Bran Muffins

"Grainy" was a name that I often called my Mom when I was younger. She had (and still does) a taste for the healthier, crunchier things in life- that's for sure. Apparently the apple didn't fall far from the tree because more often than once in awhile, my grainy side comes out as well and lately, I've had a major urge to create in the kitchen.  I suppose, creating things like that include lots of drippy, rich chocolate and beautiful sweet treats would be the most enjoyable but, I lack self control so, bran muffins will have to do.

Made with wheat bran, organic whole wheat flour, walnuts, raisins and honey, these muffins certainly fall into the healthy category. If baking with only white flour is your "normal" and crunchy really isn't your thing, you might not love these. But, if you're looking for a high-fiber, low sugar, delicious muffin recipe, give these a try. Feel free to add dried fruit, flax seed meal or other types of nuts.
Honey Whole Wheat Bran Muffins

1 1/2 cups wheat bran
1 cup white whole wheat flour
1/2 cup raisins
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 cup unsweetened applesauce
1 cup milk
2 eggs
1/3 cup honey
1/2 tsp. pure vanilla extract
1/4 cup walnuts, chopped

DIRECTIONS
1. Preheat oven to 375 F. Lightly grease or line a 12-cup muffin tin.

2. In a large bowl, whisk to combine the wheat bran, flour, baking soda, baking powder, salt, raisins, and walnuts (if using). In separate large bowl, whisk to combine applesauce, milk, eggs, honey, and vanilla extract. Combine wet and dry ingredients, just mixing until the batter is moistened throughout.

3. Divide the batter between the 12 muffin cups, filling each to the brim. Bake in preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool for several minutes in the pan before removing muffins to cool completely on a wire rack.

Enjoy your day, friends! We've had the most wonderful cold and sunny weather lately. I feel like I can't even look outside without thinking about how gorgeous it is. My bulbs are starting to peek out of the ground and I was worried that it's too early for them to be coming up. My Mom says it's normal and so, I'm choosing to believe her and see it as a delightful sign that spring is around the corner.

  2. These muffins sound yummy. I am definitely going to give these a try. Just need to find out where I can get the wheat bran first. Never have bought that before. Thanks for sharing the recipe.
