Zucchini Pizza Slices

She walks into the kitchen, "Hey Mama! What are you doing?" As I answer her and tell her that I'm cooking, she pulls up a chair. She climbs up and helps me with whatever job I'll give her, until our dinner goes into the oven. It's become a daily thing- this little girl and I working in the kitchen together. She loves it and I'm finding that I love it, too. I actually have found myself waiting to cook, until she's able to be there, on that chair, perched next to me.

Sometimes I make up "jobs" for her, when a pan is hot or if I'm using a knife. Tonight, her job was to line this pepperoni up, while I chopped the zucchini. Then she helped me sprinkle the basil and after that, she stood next to me, snacking on shredded cheese, while I finished our dinner.
These Zucchini Pizza Slices were so delicious, I know you guys are going to love them. I think the fresh basil really added a great flavor and of course, the pepperoni didn't hurt. This recipe is rather simple and there isn't really a "right" way to make these so, I'm just going to walk through what we did. When you make these, just use whatever pizza toppings you like!
Chop a large zucchini into medium-thin slices. Pre-heat your oven to 400 degrees and grease the bottom of each zucchini slice, with a touch of olive oil. Place a metal rack on top of a cookie sheet and then spread the zucchini slices over the rack. Bake them for about 10 minutes, or until they begin to soften.
 While the zucchini slices pre-bake, roughly chop up a large bunch of fresh basil.
After the zucchini slices are done baking, spread on some tomato sauce, sprinkle on some black pepper and also sprinkle on some Italian seasoning.

 Next, add on the fresh basil.
 Generously top with pepperoni.
 Lastly, top with shredded cheese.
 (My helper, eating her cheese)

 Bake in a pre-heated 400 degree oven for 15 minutes, or until lightly brown and bubbly.

Hoping for many, many, more huge garden zucchinis.....
