Cheddar Ham Cups

Rewind with me back to Thanksgiving, won't you? Today it occurred to me that I never posted my new favorite appetizer recipe and although it's almost Christmas, I can still totally get away with it. These Cheddar Ham cups, don't scream Thanksgiving, because they're perfect for any occasion. Football party? Oh, yes. Play dates? Heck yes. Chrismas brunch? Well, duh.

The story behind these little guys is kind of funny. Back in 2007, before we were even married, my husband bought this Taste of Home, Best of Holiday Recipes magazine. Actually, it's more like a book, I suppose, because in 2007, it cost $9.99. Let's just say that it's a cross between a book and a magazine and it's filled with page after page of supposedly the best recipes.

Well, if you guys know me, you know that I have a thing about clutter. Extra stuff laying around makes me a little nutty and throwing stuff away is one of my strengths, and I suppose my weaknesses too, because sometimes I throw stuff away that people still want. Like cake at Birthday parties and stuff. I'm trying to work on this!

Anyway- this funny little magazine/book thingy has been brought out ever single year by my sweet hubby around Thanksgiving and every year without fail, he thumbs through it, leaves it on the counter and then I stare at it, just itching to get rid of it.

This year, my sister asked me to bring appetizers to Thanksgiving and when Pinterest was failing me for ideas (that's a first, by the way), I asked my husband if he had any fabulous appetizer ideas. Come on- you guessed it. Out came this magazine/book type thingy.

He flipped through it and then landed on these...Cheddar Ham Cups. In my opinion, I think they need a better name, it's just not that exciting, yes?

Well because I'd already decided on making two appetizers and my other one was filled with blue cheese and cranberry sauce, two things that both he and our kids don't like, I decided to be a nice wife and go with the Cheddar Ham Cups. I figured that at least I'd have a happy husband and occupied kids.

You guys, this funny old magazine finally earned it's keep. These are so stink'n good. Hands down, my new favorite appetizer. I hope you make them and come back and tell me how much you love them. Anyone would love these. I mean come on...Biscuit dough, ham, cheese, and real bacon bits?

And for the record, I never thought they'd be this good, so I didn't really try and get any "great" photos of them. This photos don't do them justice so, in this case, a picture is not worth a thousand words. I'd say that one bite would be worth a thousand words.

Cheddar Ham Cups
Adapted from Taste of Home Magazine, 2007 edition

2 Cups Finely Shredded Cheddar Cheese
2 Packages (2 1/2 ounces each) thinly sliced deli ham, chopped
3/4 cup mayonnaise
1/3 cup real bacon bits
2 to 3 teaspoons Dijon mustard
1 tube (10.2 ounces) large, refrigerated flaky biscuits

1. In a large bowl, combine the cheese, ham, mayonnaise, bacon and mustard. Split biscuits into thirds. Press onto the bottom and up the sides of ungreased miniature muffin tins. Fill each with about 1 tablespoon of cheese mixture.

2. Bake at 450 for 9-11 minutes or until golden brown and the cheese is melted. Let stand for 2 minutes before removing from the pans. Serve warm.

Yield: 2 1/2 dozen
